Explora Journeys announce Mauro Uliassi partnership
Explora Journeys has announced a partnership with internationally-acclaimed Italian chef Mauro Uliassi. Chef Uliassi will offer an extraordinary culinary experience in Anthology, the Explora fleet’s speciality dining experience.
Chef Mauro Uliassi has garnered global recognition for his inventive and groundbreaking approach to Italian gastronomy, earning him three Michelin stars at his renowned restaurant Uliassi in Senigallia, near Ancona on the Adriatic coast of Italy.
A set menu at Uliassi costs up to €250 with a choice between the classic menu, the lab menu, the game menu, and the a la carte menu. Highlights include codfish tripe and celery seeds, seared cuttlefish, cheek lard oil, chard, honey and anchovy sauce; and charcoal lamb, vanilla, cherries and hazelnuts.
Uliassi's culinary style reflects his deep passion for the sea and his unwavering commitment to environmental sustainability. He celebrates the unique flavours and textures of the ocean, making him an ideal fit for Explora Journeys' dedication to locally sourced, sustainable dining experiences, while embodying a culinary "Ocean State of Mind."
